When you visit North Korea you put yourself in the hands of your guides. There is no option to choose your itinerary day to day beyond the rough outline proposed by your tour company at the time of booking. And even that can change, as we discovered when a tropical storm hit the southern part of the country where we were staying at the time.

Colombia is notorious for a particular crop, but as a visitor you’re not very likely to visit any farm growing that! However, they are very openly proud of their coffee and many farms welcome visitors. We visited a typical farm with a guide, Juan-Paolo, who was a former employee.

High in the hills above Pokhara the inhabitants of small villages live much as they have always done. Theirs is a life of hard work, farming a land of steep fields and terraces. But while the work is hard, the backdrop is stunning. I wonder how often they pause to appreciate their surroundings, raising a weary head to gaze in wonder at these mountains as I did?

Kerala can be regarded as consisting of three parallel environments, running north to south down the state. There is the coastal strip and backwaters, where the emphasis is on fishing and trade; the slightly higher agricultural strip where pineapples, bananas and a variety of other crops are grown; and the so-called High Range, part of the Western Ghat, where tea, coffee and spices predominate.

There’s a clue in the name! The Cardamom Hills in Kerala are famous for the growing of their namesake spice and many others besides. Peppercorns, vanilla, cloves, nutmeg, cinnamon and more are grown on the small farms here. But also coffee and different fruits such as banana, avocado and jack fruit.

On a recent visit to Swaledale I became obsessed with capturing the patterns created by the drystone walls dissecting the fields above the valley and the stone barns scattered across the green landscape.
